06.25.2020: Covid Quarantine Day 1 Million
Literally feel like this Covid-19 thing will never, ever end. We have been in a pandemic officially since mid-March, but the virus was here in America much, much sooner. It has created a political divide in our country that I never thought I would see. One side said the covid was just a hoax and not real, the other side said it was going to kill everyone in the country if we didn't contain it. Reality is somewhere in the middle. It definitely is not a hoax, and it is spreading like wildfire. However, most people that get it survive. Some die, some have major scarring on their lungs, and some recover just fine. While it makes no sense to shutdown an entire country, other countries did it, and came out way ahead. They caught it early, shutdown, took the major economic hit, and are opening back up slowly with no major recurring outbreaks. We, however, have started opening up and people are going crazy to get back out and get back to normal. The community spread happening in some states is outrageous. While we can say that most people are going to get it anyways, so just deal with it now, it is still heartbreaking to see the people dying from it. All we can do it take care of ourselves, be cautious about where we go & when, wear a mask when in public, and wash our hands OFTEN! We haven't been anywhere anyways, and are glad we can work from home, and no one we know has been hit directly with it. Definitely just ready for it to be over. This cannot be our new normal.

01.11.2019: Fried Chicken Ramen for Dinner
We are kinda addicted to fried chicken ramen right now, and today was a cold day, and we were craving some amazing soup - Fried Chicken Ramen!! This was our first time making it at home, but it turned out ridiculously good! Vince fried the chicken, I made all the extras and the broth...and taadaaa!!! Topped it off with a little sake and the nice was perfect!

01.07.2019: My Special Pozole
I make a few special pozole recipes but this is one of my favorite non-traditional ones! Roasted green chili & tomatillo chicken pozole! Yummm!!!!!! It takes a few hours, but so worth every second!

01.06.2019: Riverside Drive-By
Not a drive-by like you might be thinking - there were no gun shots! On our way home today, we drove by Dufferin to check out the changes our the house. It looked good, but bare. Not like Mom & Dad had it! So sad, and I miss that house so much! So many good memories!

01.05.2019: Cold, Rainy and SHABU!!!
Its a cold and rainy night - which is perfect conditions for us to visit Shabu Shabu! This place is in our top 3 restaurants in Huntington! So much fun, and sooooo good! Only downside is that you smell like Shabu until your next shower! Worth it!
01.05.2019: Chilly Day at the Beach
This morning Lex got up early to go play soccer with his friends down on the beach in Newport. Vince went with him and walked on the boardwalk - and met Christina, the boys and I down at the pier. We were going to have croissants for breakfast and let the kids run around. We decided mimosas and bloody marys sounded good - so we went to one of the bars along the boardwalk and waited for Lex to finish soccer and meet us there. Nice, cold, relaxing morning at the beach!

01.01.2019: A Snowy Start to 2019
We woke up this morning to a beautiful blanket of snow! The kids were sooooo excited to go out and have snowball fights and build a snowman. Actually I think Mom was just as excited as they were too! They had a great time throwing snowballs at each other until their hands froze. Later in the afternoon, most of the snow had melted so we went fishing. It was pretty chilly out though so we didn't stay out for too long. Super fun day hanging out in the cold!
